The Dairy Data set includes data files covering domestic supply and demand and trade of various dairy products. Data on the U.S. dairy situation and commercial disappearance are updated monthly, and U.S. milk production and related data are updated quarterly. All other data files are updated annually. These include data on supply and allocation of milk fat and skim solids; dairy per capita consumption; fluid milk sales; milk supply by State and region; milk production and factors affecting supply and utilization of milk in all dairy products; and numbers and size of milk bottling plants.

Other data of interest for the dairy industry include Milk Cost of Production Estimates and Price Spreads from Farm to Consumer. Older archived dairy data, preceding the data files below, is available from the Dairy Yearbook (last updated in September 2005).
Note the following:
- On May 14, changes were made relevant to calculations for dry skim milk products in the data set “Commercial disappearance for dairy product categories (monthly and annual).” Previously, there were annual and monthly worksheets for nonfat dry milk and skim milk powder (NDM and SMP). These worksheets have been changed to include columns for production and stocks of dry skim milk for animal use. Calculations of total disappearance and commercial disappearance for dry skim milk products reflect these changes. Titles of the worksheets now reflect that these worksheets are for dry skim milk products.
- On May 14, export data for milk in all products for 2020 were revised to include products exported under HS 0403900000 (buttermilk, curdled milk and cream, kephir and other fermented or acidified milk and cream). Export quantities have been reported for this product since January 2020. For years before 2020, export quantity data are unavailable for this product. This change is reflected in “Commercial disappearance of milk in all products (monthly and annual,” and “U.S. dairy situation at a glance (monthly and annual). The information concerning milk-fat and skim-solids conversion factors for the product has been added to the export worksheet in the “Dairy conversion factors and sources” file, available in the Conversion factors section of the ERS Dairy Data Documentation page.
- The data set “Milk cows and production by State and region (Annual)” was published using a new format on May 4, 2020. The data using the old format will remain on this webpage until August.
