Detailed Objective: This project will explore the short-term and long-term effects of changing defaults on children’s food choices and preferences compared with interventions that seek to improve knowledge about healthy choices or provide economic incentives. Work under this planning grant will develop research methods to test whether behavioral economic theory can be used to redesign school eating environments to (1) shape children’s choices in the moment and (2) develop healthier eating habits that persist.
